D&D 5E Suggestions on modifying the BBEG in Storm King's Thunder *SPOILERS*

I may have gone a ... bit ... overboard in the story telling and magic item creating during the playthrough of this adventure.

Because of that, I would like to replace the Blue Dragon Lymrith with a creature from the elemental plane of earth that uses acid attacks instead of breathing lightning.

Any suggestions on what/who to use. Other changes that would indicate?

Given Imrith lair is full of statues and all that stuff, how about making her an ancient black dragon (acid breath) that is infused with the elemental plane of stone, making her a gigantic gargoyle-like dragon.

Maybe add the petrification acid gas from the gorgon and some kind of passwall effect and you're golden.
